5 BBQ Recipes That Make the Perfect Dinner

Barbecue has come a long way from a simple fire in a pit with the meat roasting on a spit to high-tech automated electric smokers. While some still prefer to grill their meat the old-fashioned way, on a charcoal grill, some find it easier to use an electric grill which does most of the work for you. Whichever method you prefer to barbecue your meat, the love for the grill is universal.

The following barbecue recipes are perfect for your next dinner party:

1. Simple BBQ chicken

4 boneless chicken breasts
2 tablespoons refined oil, preferably extra-virgin olive oil
1 cup of the barbecue sauce of your choice (tomato based)
1 teaspoon barbecue smoke seasoning
5 tablespoons paprika
1 teaspoon garlic powder
4 teaspoons brown sugar
3 teaspoons kosher salt
2 teaspoons black pepper

The first step in this recipe is the preparation of the rub. Mix the paprika, garlic powder, brown sugar, salt and pepper together in a bowl making sure the sugar has no lumps. Next, sprinkle this rub onto the chicken with your fingers and rub it into the meat. Cover the chicken with foil, place it in a baking dish and pop it into the refrigerator for about 20 minutes. While the chicken is in the refrigerator, combine the smoke seasoning and oil to get a basting mixture.

Now you are ready to grill the chicken. Make sure to grill each side for about 4-6 minutes. Start basting after 2 minutes of cooking time and make sure to cover all sides of the chicken with the mixture. Once the meat reaches about 160 degrees, it is ready to be served.
2. Tandoori-style chicken

8 chicken legs
1 small red onion
2 cloves of garlic
1 thumb of ginger
100ml yogurt
1 teaspoon ground cumin
A bunch of fresh coriander
1 tablespoon honey
1 tablespoon vinegar
Half a teaspoon of black pepper

Start with making small cuts in the chicken to reduce the cooking time and make sure the flavours get soaked in to the chicken. While your barbecue is heating on a medium flame, grind the coriander, garlic, onion and ginger in a mortar and pestle. Transfer the mixture into a big bowl and add the yogurt, spices, vinegar and honey to it. Add salt to taste and drop in the chicken legs. Let the chicken marinate in this mixture for at least half an hour. Next, begin grilling your chicken legs on the hottest part of the grill, making sure to turn it at regular intervals. After about 15 minutes move the chicken onto the cooler part of the grill. Grill the meat until it is done, you can check by making a small cut. Your tandoori chicken legs are ready to serve.

3. BBQ turkey sandwich

6 hamburger buns, split and warmed
1 tablespoon unsalted butter
1 thinly sliced onion
3 tablespoons cider vinegar
Half cup barbecue sauce of your choice
Half cup water
4 cups chopped cooked turkey breast
Half teaspoon kosher salt
1/4 teaspoon ground black pepper

Start with a medium sized saucepan. Melt the butter in it at medium heat. Add onion and the kosher salt. Sauté for about 7 to 9 minutes. Add in the BBQ sauce, vinegar and half cup of water. Let it simmer for about 5 minutes. Now you can add the turkey and all the seasoning. Allow the sauce to cook for 5 minutes. Place the turkey on the hamburger buns and add additional sauce as required. Cover it with the top bun and your BBQ turkey sandwiches are ready to eat.

4. BBQ chicken pizza

1 cup sliced red and yellow bell peppers
2 teaspoons extra-virgin olive oil
1 pound pizza dough
Half cup grated mozzarella cheese
Half cup Fontina cheese
1 rotisserie chicken
1/4 cup barbecue sauce of your choice
1/4 cup finely chopped parsley
Salt and pepper to taste

Start with preheating the oven to 500 degrees. Pour the olive oil in a saucepan and sauté the bell peppers for a few minutes. Roll out the pizza dough and top it with the sautéed bell peppers and two types of cheese. Pop the pizza into the oven and bake until the crust turns golden brown. This should take about 12 minutes. While the pizza cooks, you can get the chicken ready. Cut up the rotisserie chicken into bite-sized pieces and toss it in heated BBQ sauce. Once you get the pizza out of the oven, top it off with the chicken. Sprinkle salt and pepper to taste and garnish with parsley.

5. Barbecued spare ribs

1 or 2 racks of ribs (depending on the number of diners)
3 large garlic cloves
1 tablespoon English mustard
2 tablespoon brown sugar
2 tablespoon tomato ketchup
1 tablespoon dark soy sauce
2 tablespoons vinegar (brown rice vinegar is preferred)
1 teaspoon salt
2 teaspoons black pepper

The first step in this recipe is preparing the marinade. Crush the garlic and salt together until it becomes a paste and add to a bowl. Add the mustard, sugar, tomato ketchup, soy sauce, pepper and vinegar to the bowl and mix it well. Marinate the ribs for about four to five hours, making sure it is well-coated in the mixture. Preheat the barbecue and place the ribs on it once it is moderately heated. The key in this recipe is not wiping away the marinade. As you grill the ribs, brush it with marinade to keep it moist. After about 10 to 12 minutes on the grill, your BBQ ribs should be ready to be served.

Red Wine Chicken BBQ Recipe

The beer has always been the beverage of choice when it comes to barbecue. It is a known palate cleanser and as barbecue is usually reserved for the summer, beer is a natural choice. Some prefer margaritas and even daiquiris but wine is the one beverage that we never associate with barbecue. What most barbecue enthusiasts don’t know is that if the wine is paired right with barbecue, it can make an amazing combination. However, there is such a wide range of dishes you can prepare on the grill that picking the right wine to go with your chosen meat is quite a daunting task. Every type of meat is best suited with a particular wine and if you get the combination right, you would always pick the wine to go with your barbecue.

If you have leftover wine lying around, not enough to serve at your next party but too much to throw out, you could successfully use it while barbecuing. Wine doesn’t just have to be an accompaniment to your barbecue; it can be used in the cooking process too. Red wine and barbecued chicken are one of the most popular wine and BBQ combos around. While red wine BBQ sauce closely resembles traditional BBQ sauce, it has a much more complex flavor. It incorporates a fruity flavor and also has a rich color. There are a number of ways to prepare red wine BBQ chicken and the following recipe is just one of them.

1 whole chicken or 12 mixed chicken drumsticks and thighs
2 tablespoons refined oil, preferably extra-virgin olive oil
2 minced shallots
2 minced garlic cloves
1 cup of tomato sauce
2 tablespoons brown sugar
1 seeded and minced chipotle chile, in adobo sauce
1 tablespoon prepared mustard
1 cup red wine preferably Pinot Noir
Salt and pepper (to taste)

Preparation time: 30 minutes
Cooking time: 55 minutes

In a medium saucepan, heat about 2 tablespoons of your preferred refined oil. Add the shallots and garlic to the oil and sauté over medium heat until the garlic starts to smell good. This should take about 3 to 5 minutes. Add the wine, tomato sauce, brown sugar, mustard, and chipotle. Turn up the heat until it is moderately high and bring it to a boil. Then let it simmer over medium heat for about 15 to 20 minutes until the sauce thickens. Allow it to cool for a few minutes and then blend it until smooth. Add salt and pepper to taste.

Now it is time to prepare the chicken. Preheat your oven to about 425 degrees. Take a large baking sheet and line it with foil. Place a baking rack on the sheet. Season your chicken with salt and pepper, to your preference, and place it on the rack. Roast the chicken for about 15 minutes until it turns light brown. Brush some of the sauce on the chicken and again roast it, this time keep turning and brushing sauce onto every side of the chicken. Continue this process at 10-minute intervals for about 40 minutes, until the whole chicken is cooked and covered in the sauce. Once the temperature of the chicken reaches 165 degrees, it is ready to be served.

Serve up your red wine BBQ chicken and impress all your guests at your next dinner party or family get-together.

Having a themed barbecue cook-off would add even more fun to the experience. Make sure to choose a versatile theme that people would be able to relate with. Some examples are, a seafood-themed BBQ, best ribs competition or even the best burger cook-off. How to Keep Your Pellet Grill Maintained?

Pellet grills are taking the barbecue world by storm. These new-age grills are super convenient and can be used by both beginners to the BBQ world as well as experts. A pellet grill uses inch long wood pellets made from sawdust as the fuel source. These pellets are stored in a hopper and fed continuously into the fire pot where they are ignited. Pellet grills are very versatile, apart from Pellet smoker recipes; they can also be used as ovens and smokers. Pellet grills offer the convenience of electric smokers, the temperature and heat can be controlled with the touch of a button. They also offer the rich, smoky taste that charcoal grills are so well known for. This makes pellet grills the best option for those who want all the benefits of a charcoal smoker and all the convenience and ease of use of an electric smoker.

One of the most neglected topics, when it comes to BBQ, is proper maintenance of the grill. Even some seasoned pitmasters neglect to address this aspect of BBQ. It is very important to clean your grill after every use to prevent the by-products of barbecue and morsels of food from accumulating in your grill. If you do not clean your grill for long, these residual particles may end up falling into your next batch of BBQ. If you make sure to wipe down your grill after every use, you are sure to enjoy its full benefits each time you fire it up.

While pellet grills are much easier to clean than the traditional charcoal grill, they do require regular and thorough cleaning. The following pointers are sure to be useful while cleaning your pellet grill.

First, make sure your grill has completely cooled off from its last use. It is best to wait for 24 hours after using the grill. Next, get some soap; a mild dishwashing soap would do the job. Do not use any abrasive cleaners or very strong dishwashing soaps. Fill up a bucket with water and the soap. Place the racks on your pellet grill and the chimney cap in this mixture. While it is soaking, you can use a wooden spoon or any non-metallic tool you can get your hands on, to scrape the inside of the chimney and get rid of any residue sticking to the walls. Use the non-metallic tool to scrape the drain and make sure all the built-up residue has been dislodged. Once the racks and chimney cap have soaked for a while, you can take them out of the water and wipe them down with a disposable rag.

Make sure you do not get the inside of your grill wet and do not use any kind of oven cleaners on your pellet grill. The above cleaning routine is quite elaborate and can be carried out once every five uses. A preliminary cleaning with a slightly damp cloth is enough after every use. A clean pellet grill is sure to make a big difference in the quality of BBQ it turns out, so stay on top of the cleaning with the above tips.
