The beer has always been the beverage of choice when it comes to barbecue. It is a known palate cleanser and as barbecue is usually reserved for the summer, beer is a natural choice. Some prefer margaritas and even daiquiris but wine is the one beverage that we never associate with barbecue. What most barbecue enthusiasts don’t know is that if the wine is paired right with barbecue, it can make an amazing combination. However, there is such a wide range of dishes you can prepare on the grill that picking the right wine to go with your chosen meat is quite a daunting task. Every type of meat is best suited with a particular wine and if you get the combination right, you would always pick the wine to go with your barbecue.
If you have leftover wine lying around, not enough to serve at your next party but too much to throw out, you could successfully use it while barbecuing. Wine doesn’t just have to be an accompaniment to your barbecue; it can be used in the cooking process too. Red wine and barbecued chicken are one of the most popular wine and BBQ combos around. While red wine BBQ sauce closely resembles traditional BBQ sauce, it has a much more complex flavor. It incorporates a fruity flavor and also has a rich color. There are a number of ways to prepare red wine BBQ chicken and the following recipe is just one of them.
1 whole chicken or 12 mixed chicken drumsticks and thighs
2 tablespoons refined oil, preferably extra-virgin olive oil
2 minced shallots
2 minced garlic cloves
1 cup of tomato sauce
2 tablespoons brown sugar
1 seeded and minced chipotle chile, in adobo sauce
1 tablespoon prepared mustard
1 cup red wine preferably Pinot Noir
Salt and pepper (to taste)
Preparation time: 30 minutes
Cooking time: 55 minutes
In a medium saucepan, heat about 2 tablespoons of your preferred refined oil. Add the shallots and garlic to the oil and sauté over medium heat until the garlic starts to smell good. This should take about 3 to 5 minutes. Add the wine, tomato sauce, brown sugar, mustard, and chipotle. Turn up the heat until it is moderately high and bring it to a boil. Then let it simmer over medium heat for about 15 to 20 minutes until the sauce thickens. Allow it to cool for a few minutes and then blend it until smooth. Add salt and pepper to taste.
Now it is time to prepare the chicken. Preheat your oven to about 425 degrees. Take a large baking sheet and line it with foil. Place a baking rack on the sheet. Season your chicken with salt and pepper, to your preference, and place it on the rack. Roast the chicken for about 15 minutes until it turns light brown. Brush some of the sauce on the chicken and again roast it, this time keep turning and brushing sauce onto every side of the chicken. Continue this process at 10-minute intervals for about 40 minutes, until the whole chicken is cooked and covered in the sauce. Once the temperature of the chicken reaches 165 degrees, it is ready to be served.
